Recipe Makeover Contest

I ate this hideous salad over the weekend. And it was so freaking good. 

Frito Corn Salad
2 cans yellow kernel corn , drained

1/2 red bell pepper , sliced and chopped
1/2 green bell pepper , sliced and chopped
1/2 purple onion , chopped
1 cup mayonnaise
1 cup shredded cheddar cheese
5 ounces of chili cheese flavor Frito corn chips

Mix all the ingredients except the chips. Add the chips in before serving otherwise the chips will get soggy. Red peppers are expensive so you can just use green instead.

The recipe sounds awful, doesn't it? The mere thought of ingesting Fritos and mayonnaise and corn is just so wrong. There are essentially no redeeming qualities at all ... the sparse veg doesn't save it.

But it really was good.

Any suggestions for how to fix it? I think I'm going to try a mixture of non-fat sour cream and/or yogurt with a smidge of non-fat cream cheese? I don't think just switching it up to light mayo and reduced fat cheese is enough.

So when all else fails, small portions, I guess.

So here are my thoughts: Replace the corn chips with tortilla strips. (Making these is EASY. Just slice up some tortillas into strips, toss with a little olive oil, sprinkle with salt/pepper/cumin/whatever, and pop in the oven until crispy.) THEN, replace the mayonnaise in the salad with Italian dressing. I know this changes it to a non-cream base, but your arteries will thank you. :)

On second thought, to keep it southwest, or whatever you want to call it, use a light sour cream (maybe mix in some taco seasoning?) instead of the mayonnaise...
